Italian Sausage Bolognese over Pappardelle Zoodles
My newest obsession has arrived: WIDE zoodles, which I now call Pappardelle Zoodles. (Why did I never use the other side of my spiralizer until last week?) It totally revived my enjoyment of zoodles - I can say with honesty, I don't miss noodles in this dish. It was delicious. Bonus: it's passover in two weeks, and this would make an awesome, easy, quick and delicious weeknight meal.
So, here it is!
Italian Sausage Bolognese over Pappardelle Zoodles
Serves: 4
Ingredients
6 large zucchini
4 Tbsp extra virgin olive oil (I use my garlic infused, as always)
4 cloves garlic, freshly minced
1 lb ground beef
1 lb of garlic or Italian sausage, sliced
4 - 5 C marinara sauce (can use more or less based on your preferred thickness)
freshly chopped basil, as garnish
Directions
Wash zucchini and cut the tip off one end
Add 1 Tbsp olive oil to a pan and heat to medium high, brown ground beef & set aside
Add 1 Tbsp olive oil to a pan and brown on all sides, add beef back in
Add marinara sauce to meat and allow to simmer on low (at least 15 minutes)
season with freshly ground salt & freshly ground pepper
Heat another pan and add 1 Tbsp olive oil, add freshly minced garlic into the pan
Add zoodles into the pan and gently toss until heated
Add final Tbsp olive oil, and season with salt & pepper
Top with sauce mixture and fresh basil, mix and enjoy!
