Kosher Cobb Salad


I am not sure what it is about Cobb Salad, but I have always loved it. Before keeping kosher (yes . . . there was a time), it was one of my favorite things to order at a few frequented specific restaurants. I am not sure why I never thought to make it before starting my low-carb lifestyle, but a Kosher Cobb Salad is just as good as I remember the original. This salad makes a filling, delicious dinner -- and my husband loved it as well. Another good, simple, and easy weeknight dinner i'm adding to the list.

KOSHER KETO COBB SALAD

Serves: 2-3

Recipe:

1 bag romaine lettuce, chopped

1/2 large english cucumber, finely chopped

1 avocado, cubed

3 hard boiled eggs, chopped (best to make ahead and keep refrigerated)

2 C cherry tomatoes, chopped

3/4 lb romanian pastrami

3-4 boneless skinless chicken breasts

3 Tbsp extra virgin olive oil

1 tsp garlic powder

salt & pepper to taste

Directions:

Heat 2 Tbsp of olive oil on medium high in a deep pan

Season chicken breasts with garlic powder, salt & pepper

Cook until brown, and cooked through, and set aside

Add 1 Tbsp of olive oil to the pan

Chop pastrami finely, and fry until crisp. Lay on a paper towel to drain and crisp further

Chop cooked chicken, and put back into the frying pan (with pastrami remnants) to crisp up

Assemble the romaine lettuce in a wide bowl or plate

Top with rows of chopped vegetables, chopped egg, pastrami and chicken

Creamy Garlic Low Carb/Keto Dressing:

3/4 cup mayonnaise 2 Tbsp yellow mustard 1 clove garlic, crushed 1/4 C white vinegar 1 tbsp fresh lemon juice

¼ tsp paprika salt and pepper to taste Add 1 Tbsp of water at a time to desired thickness

Directions:

Shake together, and serve chilled!
